Watermelon Sorbet – 2 Ingredient dessert | #AtoZChallenge

It’s super-hot in Bangalore this year with no rains yet. I am in a water guzzling, ice-cream digging mode currently because I can’t bear this heat. The days I have to go out I curse myself. Watermelon is a wonderful fruit for the summers. It’s hydrating and obviously tastes better than plain water – 1 watermelon has 92% water – that makes it perfect for all the heat. Watermelon is also rich in vitamins C, A and B6 and has loads of lycopene, antioxidants, and amino acids. This Watermelon Sorbet recipe has watermelon in it’s own state – no added sugar or any other thing to alter the goodness of the fruit.

How to Make 2 ingredients Watermelon Sorbet?

The watermelon sorbet is super easy to make, by the end of the post, you will be wondering – seriously that easy! It requires just two ingredients – watermelon and a little lime juice. You don’t need any ice-cream maker or ice bath for this watermelon sorbet recipe.

The only thing that you need to spend some time on is de-seeding the watermelon. If you can manage a seedless variety of watermelon, then nothing like it. If you can’t find that then take out the seeds with a fork. Once de-seeded and peeled chop it up roughly, put it in a bowl or box and pop it in the freezer. Freeze the watermelon overnight.

Transfer the frozen watermelon in a food processor. For this watermelon sorbet recipe, you need to use a food processor or blender that has high power. I am using the Preethi Turbo Chop the one that I made the Frozen Banana Ice Cream with. It is fast and has good power. Blend the frozen watermelon well for 2-3 minutes. Stop the processor, scrape the sides so that everything is blended well.

At this point, you will see the frozen watermelon is coarse to look at. Add the juice of half a lemon and blend again for 2 minutes. The smooth, icy, watermelon is ready to dig into.

How to serve Watermelon Sorbet?

This is a dessert that you need to consume quickly. It’s basically blended ice because watermelon, as I told you is all water. If you leave it outside for long it will turn into juice. You can serve right after blending. But I had put it in the freezer for 20 minutes so that they were firm again.

Bangalore is so hot now that everything is melting – I have a feeling I’ll melt like chocolate soon! By the time I was done doing my photos for the blog post, it has started to pool at the base.

Ingredients
  • Watermelon – 2 cups – peeled, de-seeded, diced and frozen overnight
  • Juice of half a lemon
Instructions
  1. Blend the frozen watermelon in a blender or a food processor for 2 mins
  2. Once it turns coarse add lime juice and blend for another 2 mins
  3. Freeze the sorbet for 20 minutes
  4. Scoop out and enjoy
  5. Not leave it out for long.

I just tried this and it was amazing.. I will definitely be making this often. I drizzled a couple of drops of peach balsamic vinegar on top and it was delicious. Thanks for the post.
