Microwave Carrot Mug Cake – 2 minute mug cake recipe | #AtoZChallenge

This April I am sharing many quick and easy dessert recipes. The A to Z Challenge can be tiring and trying if you are not prepared, you sometimes might want to throw everything and not write anything at all! But let me tell you some positives so that you see the brighter side. The more you write, read, comment share you network better, you help your blog’s health and rank. So don’t quit! After thinking for ages whether to make a Mango Mousse or Mishi Doi or Macaroons I thought of doing some Microwave cake because – its easy, quick and without a lot of fuss. After my Instant Microwave Brownie I was thinking what can I make which is quick, healthy yet tasty and then thought of why not a carrot mug cake in the microwave?

I am personally a big fan of carrot cakes especially the flourless gluten free version of it. But since this is a quick fix recipe this carrot mug cake is made with regular flour, sugar, butter and egg. But like any other mug cake, it’s super easy and as I told you it’s ready before you can even make an instant noodle!

How to make Carrot Mug Cake in Microwave?

In a mixing bowl break an egg. Add to it all the ingredients – softened butter, flour, grated carrot, powdered sugar, baking powder, cinnamon powder and mix them together with a fork. Add 1 tablespoon of milk if you think it is a little thick.

Once the batter is ready, grease a microwave safe mug with butter and spoon in the batter in it. You can add some nuts or dry fruits too if you want. Tap the mug on the work top a few times so that the batter sets in an even layer.

Pop it in the microwave at the highest temperature. I have baked for 1 minute and 20 seconds at 950W. If your microwave goes up to 850 then bake for 2 mins.

How to serve the Carrot mug Cake?

You can have it just like that – thats what I did. But if you want to go crazy you can add some whipped cream or make a cream cheese frosting with cream cheese, lime juice and sugar. But I like my naked cake. See what a beautiful tower it is when I un-molded it.

Ingredients
  • Flour – 4 tablespoon
  • Powdered sugar – 4 tablespoon
  • Egg – 1 whole
  • Grated Carrot – 4 tablespoon
  • Baking Powder – 1 teaspoon
  • MIlk – 1 tablespoon
  • Cinnamon powder – 1 pinch
  • Butter – 1 tablespoon, softened
Instructions
  1. Mix all ingredients in a mixing bowl
  2. Grease a microwave proof mug
  3. Pour the batter in
  4. Microwave at 950W for 1 min 20 seconds
  5. Serve warm

I’ve seen recipes of mug cake around, but I’ve never tried one. Looks like fun. And I like the recipes of the carot cake.
But I don’t ahve a microvawe, do you think this will work in the regular hove too?
