What happens when you are having desserts every day? You want to find out ways to add healthy stuff in your dessert to have some mercy on yourself! I am in a mug cake mode lately because they are so quick and easy. I thought let’s make something healthy, quick which tastes awesome. So why not make a banana bread mug cake – which is gluten-free, sugar-free, dairy free and completely vegan. That’s good news for the ears right?

I love using fruits in desserts, and banana cakes and banana bread are one of my favorites because they are super simple and super yum. In this Banana Bread Mug Cake, however, I am replacing everything with healthy stuff. There is oats instead of flour, there’s maple syrup instead of sugar, there’s vegetable oil instead of butter, how’s that?

Microwave cooking is easy and fast, and I find it very weird when I hear people use microwave mostly for heating! My MIL is one of the biggest example of it! You can make loads of things in a microwave. Maybe I will have more microwave recipes in future in my blog.

How to make Quick Banana Bread Mug Cake?

Take half a ripe banana and mash it with a fork. Those bananas which look ugly with black patches are the best ones for baking. They are softer and sweeter than a fresh banana. Whenever I have bananas turning ugly I use them up in baking, no throwing away anything in my house. Mashed bananas are good replacements of egg in baking, that’s why this mug cake is eggless too.

I am using oats flour in this Banana Bread Mug Cake recipe. Take some instant rolled oats in a grinder and pulse for 2-3 seconds till you have a coarse powder. That’s enough for this recipe. I am not a big fan of oats especially oats porridge, so I try having it in different varieties. Oats, when roasted or, baked gives a wonderful aroma and it’s much better to have it that way than in porridge!

In a mixing bowl add mashed banana, maple syrup (you can use any pancake syrup or even caramel syrup), vegetable oil (or any flavorless oil), baking powder, oats flour, nutmeg powder and mix them well with a fork till there are no lumps. Add some chocolate chips for some added love to the Banana Bread Mug Cake.

Take a microwave safe cup pf mug and grease it with cooking spray or a little oil. Pour the batter in and tap over the counter so that it sits at one level. Sprinkle some chocolate chips over it.

How long to bake the Banana Bread Mug Cake in Microwave?

Microwave works much much faster than an oven. All microwaves are different according to their healing capacity. I have one that goes up to 950W. So I bake my cakes for 1 minute and 20 seconds at the highest temperature in my microwave. If your microwave is 800W bake it for 2 minutes if its 1000W bake it for 90 seconds. So you have to adjust the timing depending on your microwave.

Garnish with some banana slices and sprinkle some nutmeg powder. Serve warm. I had it for an indulgent breakfast. It has enough energy to see through half the day!

Ingredients
  • Ripe Banana – half, mashed
  • Maple syrup – 1 tablespoon
  • Vegetable Oil – 1 tablespoom
  • Baking powder – 1/4th teaspoon
  • Salt – a pinch
  • Nutmeg powder – 1/8th teaspoon
  • Oats flour – 3 tablespoon
  • Vanilla essence – 1/2 teaspoon
  • Chocolate chips – 1 tablespoon
Instructions
  1. Mix mashed banana, vanilla essence, maple syrup, vegetable oil in a mixing bowl
  2. Add oats flour, baking powder, salt and chocolate chips to oit and mix well with a fork
  3. Grease a microwave safe cup
  4. Pour batter
  5. Sprinkle some chocolate chips on top
  6. Microwave for 1 minute 20 seconds at 950W
  7. Garnish with banana slices and nutmeg powder
  8. Serve warm

I am one of those who keeps on hearing about the ill effects if microwave and dont even use it for heating – I use its grill and oven functions only.
To be very honest, this cake looks like a bit of mess and not at all appetising to me! Was this after you dug into it or just out of the oven?

Banana bread is my fav, so I almost got up to make myself a quick mid-morning snack, till I realised that I don’t have maple syrup/caramel syrup at home. Any other substitutes? Can I just leave it out?

you can make mug cakes with many fruits, but not this recipe though, bananas are great with baking, they dont need anything else. Will share more fruit recipes.

I have actually tried banana mug cake with some cocoa (as far as I remember) and then added some walnuts. But adding oats does sound healthy and better than eating it in the routine way which is yuck! We do share our dislike for oats I gathered πŸ˜€

I am trying to make a smash cake for my son’s first birthday and like the looks of this recipe. Only thing is that even though it looks delicious it looks a bit ooeu gooey. Would I be able to pop this out of the mug easily?

You can move a knife along the edges of the mug to loosen it and then take it out easily. Grease the mug and dust some flour on it. You can then take out the cake very easily.
