As I told you in my last post I am going to do a Dessert A Day Challenge where I am going to share 26 lip-smacking yet easy dessert recipes throughout April. It’s all going to be a lot of fun – dessert recipes from A to Z! So what do I have on the very first day for A. What do you learn first in your kindergarten – A for Apple B for Banana – I am sticking to that and I do have A for Apple today! I’m going to share an Easy Apple Hand Pie Recipe today which is fresh, quick, homemade and very easy to make. You need fewer ingredients and you can make it ahead if you are serving the hand pies at a tea party. I like this Easy Apple Hand Pie Recipe because they are individual pies, they are rustic and you don’t have to spend much time in decorating them. So let’s find out how we make our Apple Hand Pies.
Pastry Dough for our Easy Apple Hand Pie Recipe
I want to use loads of fruits in my recipes for this challenge because my one and half year old is also a consumer of these! When he sasses me with no-eating-fruit face I use them up in some dessert or bake them. With this apple hand pie, though – he was very happy with the pastry crust!
This is a simple homemade pastry crust using flour and butter. Check my Best flaky pastry dough recipe post for the recipe of this pastry crust.
Apple Filling for the Easy Apple Hand Pie Recipe
This apple hand pie recipe is so laid-back and rustic anyone can make it. All you need is apples, sugar, and a dash of cinnamon for the filling. In a saucepan add in chopped apples and pour granulated sugar on top of it and leave it for 5 minutes. It will turn into a golden caramel apple goodness. Stir in between so that the caramel is not sticking to the bottom of the pan. Add a dash of cinnamon powder – I prefer grating a fresh cinnamon stick – I like the aroma of it.
From here you be creative and add varieties to the recipe with raisins, sultanas, dried cranberries or whatever you like in the filling. Once the apples are soft turn off heat and keep aside.
Arrange the Apple Hand Pies
Roll out your pastry dough on a well-floured work top. Using a bowl make two discs out of the rolled pastry dough. Place one disc on a parchment lined baking tray. Place a spoon full of filling at the center of the pastry dough and cover it with the other discs. Seal the edges around by pressing a fork. Use the fork to make some pokes on top of the pie so that the steam can come out. Give a quick egg wash and pop it in a pre-heated oven. Bake for 15 -20 minutes at 220C / 425F for 20 minutes.
If you want to make it completely vegan, skip the egg wash and give a milk wash to get the golden glow!
How can you serve your Apple Hand Pies?
These little apple hand pies are good to go alone as they are. But if you want to get creative you can serve with a scoop of vanilla ice cream, or a drizzle of maple syrup or caramel syrup. The one and a half men enjoyed just like that – the rustic way.
- Red Apple / Cooking Apple - 1, peeled and chopped
- Sugar - ½ cup
- Cinnamon powder - ½ teaspoon
- Dry Fruits - 2 tablespoons (optional)
- AFP Flour - 1 cup sifted
- Butter - ⅓rd cup chilled and chopped in small bite size pieces
- Chilled Water - 2-3 tablespoons for combining dough
- Pre-heat oven at 220C/425 F
- Line baking sheet with a baking sheet / parchment paper
- Add butter to flour and crumble them with your fingers
- Once crumbled add flour to your work surface and bring the crumble togetherA
- Add chilled water to incorporate everything together
- Do not knead
- Once combined wrap in a cling film and fut in freezer for 15 minutes
- Take out after 15 minutes and roll out on a floured surface
- Use a bowl to make round discs
- Place one disc on the lined baking tray
- Add spoonful filling in the center
- Cover with the second disc and press the edges with a fork to seal the edges
- Make slits/holes on top of the hand pies to let steam out
- Give a good egg wash
- If you want a vegan option - brush with milk
- Bake for 20 minutes at 220C/425F
- Cool for 15 minutes
- Serve as it is or with a scoop of ice cream
